Corn Salad

I made this salad last week for the first time and my family has already requested I make it again! It’s the perfect summer salad, light, crisp, delicious and easy!


  • 8 ears of corn
  • 1 red onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1-2 jalapeños
  • 1 pint cherry tomatoes
  • 2 avocados
  • 1 bunch cilantro
  • 2 limes
  • 2 tbsp Olive oil
  • 2 tsp Cumin
  • Taco seasoning/hot sauce
  • 2 tbsp Red wine vinegar


    Slice corn off of the cob into a large bowl.
    Dice all vegetables, add avocado right before serving.
    Zest 1 lime, squeeze the juice of both limes into salad.
    Mix well, refrigerate until ready to serve.
