Italian Vegetable Soup

Love this take on traditional minestrone! You can throw in whatever veggies you have in your fridge, freezer or pantry. Adjust stock/water as you see fit and season to taste.


1 yellow onion diced
1 head of garlic minced
2 carrots chopped
3 stalks of celery chopped
1/2 c green beans
2 c chopped kale
1 zucchini chopped
1 red bell pepper chopped
1 green bell pepper chopped
1 can garbanzo beans
Half a head of green cabbage chopped
1 can kidney beans
1 can diced tomatoes
1 small can tomato sauce 
4 c chicken or beef stock
2 bay leaves
2tbsp Italian seasoning
1 tbsp Basil 
Fresh cracked pepper 
Red pepper flakes
Optional – add meatballs, sausage, chicken
Combine all ingredients, bring to a boil, of necessary add more stock or water. Turn down to simmer and cover for 1 hour or longer. Can also cook in the crockpot on low for 5+ hours.
