
Hello friends! Thank you so much for your feedback on last week’s What’s For Dinner? post, I plan on this being a weekly feature. If you have questions or suggestions, please don’t be shy about reaching out to me.
Here are the ingredients and shopping list for each day of my dinner plan. Many of the meals are pretty basic and easy. Could we eat healthier, absolutely, but I try to prepare foods that my 4 and 8 year old will eat and foods that are simple to prepare. I sometimes get internet critics that let me know my recipes could be better.
Monday- Crockpot Spaghetti & Salad
Ingredients – 1-2 lbs lean ground beef or turkey or sausage, bell pepper, yellow onion, garlic, jar of spaghetti sauce, basil, oregano, parsley, pasta, lettuce/greens, hard boiled eggs, 1 can of garbanzo beans, 1 can of kidney beans, cherry/grape tomatoes, red onion, feta cheese, yogurt ranch, balsamic glaze, olive oil
Chopped Salad – chop eggs, tomatoes, onion, drain beans, add feta, drizzle with yogurt ranch (I use Bolthouse brand), Trader Joe’s Balsamic Glaze and olive oil.
Tuesday – Chicken Stir-Fry
Ingredients – boneless chicken breasts/thighs, carrots, celery, onion, broccoli, bell peppers, mushrooms, cilantro, green onion, teriyaki, vegetable oil, chili paste, rice and/or quinoa
Stir-Fry Recipe – Slice or cube the chicken and cook in a tbsp of oil in a skillet. Start cooking rice or quinoa. I like to do a combo of half rice and half quinoa. Chop all veggies and saute with oil, teriyaki and chili paste. Add chicken.
Wednesday – Whole Chicken, Rice & Salad
Ingredients – whole chicken to bbq or rotisserie chicken from Costco or the grocery store $4.99, rice, butter, chicken broth, mushrooms, parsley, lettuce/greens, hardboiled eggs, 1 can of garbanzo beans, 1 can of kidney beans, cherry/grape tomatoes, red onion, feta cheese, yogurt ranch, balsamic glaze, olive oil
Rice – brown 1 c rice in a pan with 1 tbsp of butter, then add 2 c of chicken broth, sliced mushrooms and parsley. Bring to a boil, then simmer covered for 20-30 minutes. Check after 15 minutes and stir.
Make same salad as Monday.
Thursday – Grilled Cheese Sandwiches & Salad
Ingredients – bread and cheese of your choice, optional add deli meat or leftover chicken from Wednesday, lettuce/greens, hardboiled eggs, 1 can of garbanzo beans, 1 can of kidney beans, cherry/grape tomatoes, red onion, feta cheese, yogurt ranch, balsamic glaze, olive oil
Grilled Cheese – I prefer sourdough bread and I spread a tiny amount of mayo on the outside of the bread to grill it in a cast iron skillet. This is a trick my grandma taught me.
Salad- I will throw together whatever we have. Sometimes I add beets, pepperchinis, olives, salami, cucumber, avocado.
Friday – BBQ Tri-tip, Brussels Sprouts & Baked Potatoes
Ingredients – tri-tip, dry rub, Brussels sprouts, balsamic glaze, olive oil, red onion, bacon, blue cheese, siracha, cream cheese, mayo, green onions, potatoes and whatever toppings you like.
Tri-tip – my husband bbq’s the tri-tip on our Weber kettle bbq with a rotisserie attachment. We put a dry rub on the meat right before putting it on the grill. Many years ago, I had another blog. Here is the recipe for traditionally bbqing tri-tip.
Baked Potatoes – depending on time, I either bake the potatoes in the oven at 350 for 45 minutes or a will poke them with a fork and microwave on a plate for 4 minutes at a time. I position the potatoes in a square/circle and turn over every 4 minutes. I microwave them for 12 minutes total.
Saturday – Crockpot Ribs, Mac ‘N Cheese & Broccoli Salad
Ingredients – ribs, pasta, cheese, cream/half-n-half, jalapenos, bacon, bread crumbs, broccoli, hard boiled eggs, bell peppers, red onion, greek yogurt ranch
Sunday – Ground Turkey Crockpot Chili & Skillet Cornbread
Ingredients – ground turkey, onion, bell peppers, jalapeno, zucchini, garlic, black beans, pinto beans, garbanzo beans, kidney beans, canned corn, diced tomatoes, tomato paste, chili powder, cumin, hot sauce, cheese, onion, sour cream, 1-2 boxes of Jiffy Corn muffin mix $0.47, egg
I mix things up and use lots of different kinds of canned or dried beans.
Cornbread – follow directions and cook in a greased cast iron skillet for 20-30 minutes.

Are you doing any meal prepping in advance? Is everything prepared the same day?
The only “prep” I do is I make hard boiled eggs on the weekends for snacks and salads. When I can, I will chop veggies up the night before for crockpot meals or whatever I’m cooking. I put bell peppers, yellow onion and zucchini in almost everything I make. 😊
