What’s for dinner? 1/27-2/2

Hello friends!  This last week has put me through the ringer, I’m thinking I will start posting my What’s for Dinner? weekly dinner plan on Monday mornings.  Life has been busy with work, kids activities and trying to be an adult!  I hope you enjoy this week’s dinners.  I truly appreciate all of you who have shared, commented, and messaged me about these posts.  My goal is to help you with ideas and recipes for your dinners.  I know what it’s like to get in a food rut.

Monday – Pesto Chicken & Broccoli Pasta with SaladIMG_6155

Ingredients – pesto, I get it from Costco, chicken breasts, broccoli, garlic, parmesan, pasta, lettuce/greens, hard boiled eggs, 1 can of garbanzo beans, 1 can of kidney beans, red onion, feta cheese,  yogurt ranch, balsamic glaze, olive oil.

Pesto Pasta – Slice 2-3 chicken breasts and saute in olive oil, add sliced broccoli and minced garlic.  Cook until chicken is done.  Cook your favorite pasta, add to chicken and broccoli and add as much pesto as you like.  Stir well and top with parmesan.

Chopped Salad – Chop eggs, tomatoes, onion, drain beans, add feta, drizzle with yogurt ranch (I use Bolthouse brand), Trader Joe’s Balsamic Glaze and olive oil.

Tuesday – Cilantro Lime Shrimp Tacos

Ingredients – wild shrimp peeled and deveined, 2-3 limes, cilantro, tajin or taco seasoning, salsa, onion, bell peppers, jalapenos, tortillas, beans, rice, toppings and condiments.

Wednesday – Sandwiches and Salad

Ingredients – bread and cheese of your choice, optional add deli meat or leftover chicken from Sunday’s dinner, lettuce/greens, hard boiled eggs, 1 can of garbanzo beans, 1 can of kidney beans, red onion, feta cheese,  yogurt ranch, balsamic glaze, olive oil.

Chopped Salad – Chop eggs, tomatoes, onion, drain beans, add feta, drizzle with yogurt ranch (I use Bolthouse brand), Trader Joe’s Balsamic Glaze and olive oil.

Thursday – Sausage & Grits

Ingredients – polenta, I get it from Trader Joe’s, you can buy it in a tube in the pasta section of most grocery stores, sausage – I get chicken andouille sausages that are already cooked,  bell peppers, onion, mushrooms, zucchini, garlic, jalapenos, cilantro, green onion, barbeque sauce – I love Trader Joe’s or Kinder’s Sriracha BBQ sauce. Optional cheese to add to grits.

Directions – slice and dice up all veggies and add to a large pan with olive oil.  Saute and add diced sausage.  Bring to a boil in a small pot, 1 cup of water or chicken stock.  Slice and cube the polenta.  When the water is boiling add the polenta.  Boil for 5+ minutes.  Mash with a potato masher.  Optional to make creamer, add sour cream or cheese.  Add BBQ sauce to veggies and sausage.  Serve over grits and garnish with cilantro and green onion.

Friday – Crockpot Carnitas

Ingredients – pork shoulder/butt, can of el pato sauce, cumin, bay leaves, jalapenos, tortillas, salsa, saute onions and peppers, beans and rice, your favorite toppings, tortillas, diced onion and cilantro.

Saturday – Crab Feed

The Mr and I are going to a Crab Feed fundraiser and the kitchen is closed!

Sunday – Superbowl Nachos and Jalapeno Poppers

carnitas jalapeño poppersIngredients – tortilla chips, leftover carnitas, non-fat refried beans, cheese, onions, jalapenos, sour cream, cream cheese, guacamole, salsa/pico de gallo, tomatoes.

Nachos – layer in a baking dish, chips, cheese, beans, carnitas, I tend to do 2-3 layers.  Bake at 350 degrees for 15 minutes.  Watch carefully since ovens vary.  Then top with tomatoes, onions, sour cream, guacamole, jalapenos etc.
